nyloS – The Best Restaurant On Maui is Hiding in Plain Sight

At 300 sq/ft with a mere 14-seat dining room, nyloS feels less like dining out and more like being invited to a dreamy dinner party.  If your travels bring you to Maui’s North Shore, this is the kind of rare gem you keep to yourself. Book deep in advance—because it won’t wait around.

 

Easy To Walk By And Not Even Notice.

But Tucked into the sleepy charm of Paia on Maui’s North Shore, nyloS doesn’t look like much from the outside. No valet, no neon sign. But step inside, and you’re not just entering a restaurant—you’re stepping into one of the most personal, unforgettable dining experiences on the island.

A 14-seat dining room makes every table the chef’s table. So, for everyone who happens to be there, it’s part dinner and part theater. A completely open kitchen. A husband-and-wife team (Chef Jeremy Solyn and his partner Paulina) guiding the evening as lead singer and drummer.  Every guest has front-row seats to the performance. And it begins the moment you sit down.

Where the Kitchen Has No Curtain

Chef Jeremy is laser-focused, preparing each dish in full view. There’s no back-of-house drama here—it’s all happening right in front of you. The energy is calm and confident.

You’re served a six-course tasting menu that changes constantly, built from what’s fresh, seasonal, and exceptional.

On a given night, you might savor Hudson Valley foie gras, Petrossian caviar, or Japanese A5 wagyu, delicately paired with Maui-grown vegetables or foraged herbs. Every course is composed with restraint—flavors are bold, but never overworked.

Want wine? You should. Chef Jeremy is also a sommelier, and his pairings elevate the entire meal. Expect surprises—a German riesling with crab, a chilled red with duck.

Despite the fine-dining pedigree, the atmosphere is unpretentious. The lighting is warm, the music was rock and roll, think Paint It Black and Dream On. And the tone is welcoming.

NyloS on Maui feels more like a private dinner party at a friend’s home—if your friend happened to be a Michelin-caliber chef with impeccable taste and flawless timing.

Paulina, your co-host for the night, handles service with grace and warmth. She remembers names, preferences.  Not just yours, all 14 seats that she’s overseeing.  Hospitality like this is rare.

Dining at nyloS is not just about the food (though the food is extraordinary). It’s about connection to the moment you’re in—one that feels entirely unique, entirely yours. You can feel it when you’re there.
